This creamy sauce is going to be your new favourite go to, the nutty and sweet flavour combination will excite all of your taste buds! Perfect sauce for you pasta, it is quick and easy to make whilst also perfect for storing in the fridge as well as freezer!
INGREDIENTS
BASE:
3 cups of quinoa penne, any other gluten free pasta or zucchini into zucchini noodles if wanting to go raw
SAUCE:
3 cups cubed butternut squash, baked until soft
1/2 onion
1 garlic clove
1/4 cup cashews
1/2 avocado
1/4 cup nutritional yeast
1/2 TSP turmeric
1/2 TSP paprika
1/2 TSP coriander
Salt & pepper, to taste
Water, as needed
METHOD
Prepare your base: cook your base or shred zucchini into thin slices with a peeler!
To make the sauce: blend everything until smooth and creamy. Mix into a bowl and add your base!
