This pairing is as tasty as it is unusual! Adding a twist to your cauliflower dish. The peanut butter adds a great source of healthy fat to the nutrient dense vegetable! This is best served as a snack or even side to a meat or fish dish.
INGREDIENTS
2 cups of cauliflower florets
2 TBS peanut butter
1 TSP coconut oil
1 TSP of dried thyme, oregano, rosemary or other dried herb of choice
METHOD
Once you have all the cauliflower florets broken down into bite size pieces, add all onto an oven dish. Pre-heat the oven at 200c. Add the dish to the oven a cook until half soft
Meanwhile, add the peanut butter and coconut oil to a bowl and mix well together, once the cauliflower florets are part cooked, take the dish out of the oven and evenly spread out the mixture onto the cauliflower florets. Sprinkle the dried herb of choice and add back into the oven for approx 10 minutes until the florets have fully cooked through
