An all round delicious stew with a tangy rich flavour. The combination of ingredients give make this a great healthy option. Lots of vitamins, minerals and antioxidants to support your immune and cardiovascular systems!
INGREDIENTS
200g quinoa
1 medium onion
4 garlic cloves
2 TBS minced ginger
1 cup of coconut milk from creamed coconut
150g chickpeas, drained and rinsed
3 handfuls of kale, chopped
1/2 cup sundried tomatoes
juice of 1 lemon
2 TSP ground ginger
METHOD
Saute onions , garlic and minced ginger over medium heat until translucent. Add chickpeas, milk, kale, sundried tomatoes, juice of 1 lemon, ground ginger and salt
Meanwhile add quinoa to 2 cups of water, allow to boil then simmer on a very low heat for 10 minutes, drain and set aside to cool
Bring stew mixture to a simmer and cook for 10-15 minutes. Once done pour over the quinoa
