Courgette Spaghetti

Are you finding pasta boring, bloating or just generally making you tired. Here is a great low GI alternative to Pasta. Courgette! A super hydrating vegetable that can be stripped into Pasta like spaghetti!

INGREDIENTS

1 X courgette

2 X cloves of garlic

1 cup of sun-dried tomatoes

3 X cups of organic chopped tomatoes

1 X date (pitted and soaked)

1/4 red onion, diced

2 x TBS extra virgin cold pressed olive oil

1/2 handful of parsley

1/2 handful of basil

1/3 cup of pitted olives (optional)

pinch of sea salt or kelp/dulse flakes

METHOD

Using a peeler or spiralizer shave down the courgette to paper thin noodles

In a food processor or blender add all other ingredients to create the sauce. Place the courgette on a plate and top with sauce and seasoning
